This subproject is one of many research subprojects utilizing theresources provided by a Center grant funded by NIH/NCRR. The subproject andinvestigator (PI) may have received primary funding from another NIH source,and thus could be represented in other CRISP entries. The institution listed isfor the Center, which is not necessarily the institution for the investigator.This is a pilot study regarding the effects of a long term vegan diet on lipid/lipoprotein profile glucose tolerance, insulin action and cardiovascular health. The participants will be 20 healthy men and women oler than 30 years on a vegan diet for at least 3 years. They will be matched with 20 men and women eatig a typical American diet matched for age, sex, physical activity, and family history for tpe 2 diabetes. In these subjects we will evaluate oral glucose tolerance/insulin action by performing an OGTT and lipid profile. We will also evaluate cartoid artery initima/media thickness using an echo-doppler technique.
