This subproject is one of many research subprojects utilizing the resources provided by a Center grant funded by NIH/NCRR. The purpose of this pilot study is threefold: 1) to determine if the net acid excretion due to a meal can be obtained within five hours of consumption; 2) to see if adding fruit or vegetable to a pre-determined meal will decrease the net renal acid excretion within five hours of consumption; and 3) to examine if the predicted renal acid load of the meal determined using nutrient data from food tables is similar to the acid load obtained from urine measurements.
