This subproject is one of many research subprojects utilizing theresources provided by a Center grant funded by NIH/NCRR. The institution listed isfor the Center, which is not necessarily the institution for the investigator.The main aim of this study is to compare the fatty acid compositions of the milk fat of women representing five different ethnic groups in New Mexico, with emphasis on the trans fatty acids, conjugated linoleic acid isomers, and the n-3 and n-6 polyunsaturated fatty acids.
The second aim i s to correlate these fatty acid data with the diet and body composition of the women from whom the milk is obtained.
