The institution listed isfor the Center, which is not necessarily the institution for the investigator.This study will examine the impact of nutrition education on diabetes outcomes, and the theoretical framework will enhance the assessment of the potential mediators of the behavior change process. The intervention will also offer insights about the ideal conditions for delivering future education about the glycemic index.Abstract: Diabetes affects ~ 6% of the U.S. population and the prevalence of diabetes continues to increase. Controlling blood glucose is critical to prevent diabetes complications. Nutrition therapy for diabetes management focuses on carbohydrate quantity, while current evidence supports a potential for carbohydrate quality, or glycemic index, as well. Feasibility studies regarding the effectiveness of educating clients about the quantity and quality of carbohydrate (glycemic load) for diabetes management and thus adopting a low glycemic load diet are lacking. This study will implement and evaluate a theory-based intervention that presents information about carbohydrate quantity and quality. Participants will attend 9 weekly education sessions as part of an immediate or delayed treatment group. The impact of the intervention on glycemic load, metabolic endpoints and potential mediators of behavior change will be evaluated. Specifically, outcome measures will include dietary intake, knowledge, self-efficacy, outcome expectations, fructosamine, triglycerides, and body weight. The measures will be collected at 3 time points in a randomized pretest-posttest design.
